Grilled Skillet Brownie

Before you put your grill away for the season, you NEED to make these skillet brownies – whether you make them just for you or to share is your call! 
Here’s what you will need:
¾ cup plus 1 tbsp all-purpose flour
½ tsp kosher salt
¼ tsp baking soda
7 oz unsweetened chocolate, chopped
½ cup salted butter 
2 tbsp canola oil
3 large eggs
1 cup packed light brown sugar
1 cup granulated sugar
2 tsp vanilla extract
Here’s what to do:
Adjust grill as needed to maintain an internal temperature of 350 degrees to 400 degrees Fahrenheit. If you are using a gas grill, the medium setting should work! 
Whisk together the flour, salt, and baking soda in a bowl. Place a heatproof bowl on unoiled grates of the grill over the side of your grill without coals or unlit side of gas grill. Add chocolate, butter, and oil to the bowl. Cook & stir constantly until melted and smooth. Once smooth, remove from heat and let cool slightly (about 5 minutes). 
Add eggs, both sugars, and vanilla to chocolate mixture. Stir together until fully mixed. Add flour mixture and gently stir until combined.
Grease a cast iron skillet evenly with non-stick spray or butter. Place skillet on grill over the side without coals or unlit side of the grill. Cover and grill until a toothpick comes out almost clean – around 40-45 minutes. Remove from heat and allow to cool for 10 minutes. Cut into wedges and serve with vanilla ice cream or whipped cream!
